Star anise is the seed pod of the Illicium verum plant, an evergreen shrub native to Southwest China. It is star-shaped, which gives it its name.

It has a strong, warm, sweet, and spicy flavour similar to licorice, fennel, clove, and anise. Though slightly sweet, it is mainly used in savoury cooking and works well with citrus, onions, poultry, beef, cinnamon, nutmeg, and ginger. Best used in small quantities.

It is not related to anise or fennel, but has a similar licorice-like taste. It pairs beautifully with coriander, cinnamon, cardamom, and clove.
